Go Ducks!!

Season opener tonight: Oregon Ducks versus Boise State Broncos; 7:15pm Pacific ESPN

Since I'm the main contributor to this blog I get to pick the titles. Even though we are a house divided (Matt grew up in Boise, Idaho (Boise State, Broncos) and I grew up in a sophisticated suburb of Eugene (University of Oregon, Ducks)) I get to choose who our family roots for. In the case of the Ducks v. Broncos...Go Ducks all the way. Unfortunately, it won't be on until after 10pm tonight so there's no way I'll be able to stay up to watch it. Maybe Matt will since he's having some buddies over for poker and the Falcon's game.

Today was a good day. I dropped Tyler off at school and then went down the street to the bike paths ("multi-use paths") and did an awesome 3.65 mile jog around the lake. It was so refreshing to run outside. It beats the treadmill hands down.

Back home after-school we watched last night's episode of Wipeout.
Lauren wanted a picture of her proving she could watch TV without sucking her thumb. She's still doing great.

While they watched their show I made some fresh bread for our
Roast Beef sandwiches.

Dinner was good. I used the left over roast beef from yesterday and the left over celery root. Dinner was a hit with everyone.

(this uses yesterday's left-overs)
In a medium bowl, combine 2 T. mayonnaise, 4 t. Dijon mustard, 2 t. fresh lemon juice, 2 t. chopped capers, and 1 t. prepared horseradish; season with coarse salt and ground pepper. Grate reserved celery root into dressing and stir to combine. Spread mixture on 4 slices country-style bread. Divide reserved watercress and roast beef among slices, then top with 4 more bread slices. (To store, refrigerate, wrapped in plastic, up to 1 day.) Serves 4.
Matt asked what kind of cheese I used. He was surprised to find out that the grated "cheese" he thought he tasted was actually grated celery root. =)
And now I'm settling down to play catch up with my TIVO.

See ya Jeff. You made Big Brother enjoyable this year and it won't be the same without you. I hope everyone else LOSES!! (especially Natalie!!)
