Creamy Tomato Basil Soup with Sausage

Dinner last night was delicious. I was so tired all day long that I didn't have much energy to cook. Good thing this one only took about 15 minutes.

Creamy Tomato Basil Soup with Sausage
from Good Thymes and Good Food
















Ingredients:
2 Tablespoons extra virgin olive oil
1 small onion, diced
2 garlic cloves, pressed
1 lb Italian Sausage
10 fresh basil leaves, chiffonade (stacked, rolled and thinly sliced)
1 26 oz jar of your favorite pasta sauce or homemade sauce
1 14.5 oz diced tomatoes, partially drained
1 Cup water
1 1/2 Cups half and half
Pinch of salt and pepper

Directions:
1. Place olive oil and onion into a medium sized dutch oven over medium heat.
2. Add sausage until browned, about 5 minutes.
Add garlic.
3. Stir in basil leaves, pasta sauce, tomatoes, water, half and half, salt and pepper.
4. Cook until warm then reduce heat to low.
5. Simmer until ready to serve.




After dinner we played for awhile and then put the kids to bed around 7:20. We skipped the nap yesterday to play with Lea so both kids were exhausted and no one complained about the early bedtime. After they were down Matt and I watched Slumdog Millionaire (my 2nd time.) I love that movie. It's very disturbing and sad. but all in all it's a love story.

I need to figure out a better system regarding our computer usage. Lauren will jump on the computer at least 5 times a day and Tyler will sit there and watch her. She plays more computer games than she watches tv. I'm thinking of allowing each child 2 30-min. media (computer and/or TV) episodes a day. Any ideas?
