Monday:  Vegetable and Rice Paella & home-made biscuits
Tuesday:  Gingered Vegetable-Tofu Stir-Fry
Wednesday:  Picadillo Sandwiches & oven baked french fries (to use up some red potatos)
Thursday:  Carmelized Onion Macaroni and Cheese
Friday:  picadillo left-over quesadillas  (or whatever...I have Bunco)
Saturday: left-overs again
Sunday:  Quick Shrimp Creole
