Weekly Menu

Monday: Shrimp with Scallions and Potatoes (leftover from last week's menu)
Tuesday: Penne Pasta Casserole
Wednesday: l/o
Thursday: Cajun Meatloaf & corn (email me if you want this recipe)
Friday: l/o meatloaf sandwiches
Saturday: Chicken Adobo w/ Rice
Sunday: l/o or if needed boca burgers from the freezer and oven roasted potatoes.

Tonights dinner was delicious. It was Honey Glazed Carrots and Pasta with Sweet Sausage & Cabbage from the latest Everyday Food magazine. The carrots were a bit too sweet so next time I'll add a little less honey. But the pasta dish was excellent...light and very filling. (I didn't use as much sausage as they called for.)
